The Guide covers Mumbai and Delhi from 2024 onwards, and Punjab is simply not on the release map yet. So this ranking is my working list of star-worthy kitchens across Amritsar, Chandigarh, and Ludhiana, judged on consistency, sourcing, and technique against the same standards Michelin uses in Delhi.
1) Kesar Da Dhaba, Amritsar — 100-year-old dal makhani, worth every rupee at $4 a head. 2) Bharawan Da Dhaba, near the Golden Temple — reference-level chole bhature. 3) Pal Dhaba, Sector 28 Chandigarh — brain curry that outperforms most Delhi fine-dining. 4) Swagath, Chandigarh — coastal food done properly. 5) Punjab Grill at JW Marriott Chandigarh — the polished version at $40 a head.
6) Crystal Restaurant, Ludhiana — old-school Punjabi since 1958. 7) Beera Chicken, Amritsar — tandoori technique. 8) Makhan Fish, Amritsar — the Amritsari fry benchmark. 9) Barbeque Nation Elante — overrated but consistent. 10) Virgin Courtyard, Chandigarh — the only serious Italian in the state.
